Title: Processing techniques of horticultural and arable crops

Objective:

  • To strengthen the skills and knowledge of agripreneures focusing on processing techniques of horticultural and arable crops

  • To demonstrate the significance of FSSAI regulation, Good Manufacturing and Handling Practices, quality assurance and standards etc and to layout procedures of obtaining necessary licenses and certifications.

  • To understand the critical points and basic calculations while formulating a new product and optimizing a process

  • To diversify the present product variants for better competitive place in market



Outcomes of Training: After completing this training, trainees will have hands-on experience on processing various products that have been developed by the scientists of the Division of FS&PHT, namely, Antioxidant rich fruit candies, soya cookies, aonla and beetroot Crackers, RTS/Squash, extruded products, extraction of natural colourants, naturally coloured papaya candy, vacuum fried chips etc. This will generate entrepreneurial skills as the participants will get ideas for new startups, role of food safety, process and machinery requirement, HACCP, GMP, GHP and quality assurance plans for food processing units. This training will also cover practical exposure of identification of maturity indices, minimal processing, value added products and waste utilization of horticulture crops. Visiting a production site/ industrial exposure will also be included in the training for participants to widen their horizon and provide information about layout and general operations of a manufacturing plant. This training will help them to diversify their products range, improving the quality of existing products and to inculcate confidence to be more competitive in the ever-growing market place of highly nutritional and functional products.
